Akki Rotti(Rice and Cucumber Roti)

This one is my Father's fav dish and my Mom makes this all the time .One can have this roti during breakfast or dinner time. There are few variations in making akki roti...Some make this with rice flour alone.But I have used rice and cucumber together to prepare the batter.Cucumber gives great fresh aroma to your akki roti also kind of makes the roti softer from inside and the rice flour makes it like crispy from outside. It takes a while for the preparation but believe me after making this roti you will know excatly what i am refereing to, it's worth all the effort. This dish will leave you wanting for more, very tasty indeed .!!!. here comes my HAVYAKA STYLE ...Akki rotti Rceipe ...enjoi !!


Ingredient's :
2 cups sona masoori rice
2tbs urad dal
1 large english cucumber
salt to taste
rice flour for rolling

Method :
1) Wash and soak the rice and urad dal for 2 hours .
2) Peel and cut the cucumber and take juice out off this.
3) Grind the rice mixcture using cucumber juice .this batter should be thiner than the dosa batter.
4) Take the heavy bottom pan,switch on the gas and put this rice batter and stirr this mixture for 10 -20 minutes without any lumps .Rice batter should form a single dumpling.
5)It looks like chapati dough and make sure that dough should not stick to your hand .Knead the dough well still it is warm.You can use rice flour for kneading.
6) Cool this for 1/2 hour and take desire amount of dough, using rice flour roll the dough just like chapati /roti .
7) Heat the tawa and bake the roti both side , then help of tongs ,place the roti directly on the gas flame .it will rise like poori ,then turn to the otherside .
8) Repeat the same to all the remaining dough .Serve hot with any dry ,spicy curry .Enjoi !!

KARANDI / CHILLI AND GARLIC CHUTNEY (Dharwad style)

INGREDIENT'S :
1 cup red chillies (Badagi menasina kayi)
3-4 pods of garlic
tamarind lemon size
1/4 tsp jaggery
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
pinch of asafotidia /hing
oil
salt to taste

Method :

1) Soak the red chillies in hot water for 10 minutes.Then drain the water and put it in the papertowels and take off the excess water .

2) Dry roast the fenugreek seeds and mustrd seeds keep it aside .

3)With the help of the blender ,mix all the ingredient's like red chillies,tamarind,garlic, mustard ,fenugreek seeds,jaggery and salt . Add little water if required.

4)Take off the chutney mixture and season this with little oil and hing .

5) Serve the chutney with any akki roti,jolad (Jowar)roti or dosa of your choice .enjoi!!

Note :If you want to store this chutney, then heat the pan and put little oil and hing ,mix the chutney and boil this for 5-10 minutes.Store this in air tight container.like this way you can store this chutney for 2-3 weeks .

MARINARA SAUCE

Marinara sauce is a basic tomato sauce . It needs few ingredients but tastes heavenly .This red sauce tends to be little spicer than other tomato sauce .It can be used with any main course dishes like pizza,pasta or as a dipping sauce for any finger food like bread sticks ,pakodas .Here is my very simple recipe made of chunky tomato ,little herbs and chilli pepper. Enjoi!!

INGREDIENT'S:

1 tin tomato chunks
1 small onion nicely chopped
2 pods of garlic chopped
1 bay leaf
2 tsp rosemary and thyme mixed herbs
1tsp pepper flakes
salt to taste
1/2 tsp pepper
2 tbs olive oil

METHOD.:

1) Heat the heavy bottom pan ,pour little olive oil ,put bay leaf , chopped onion and garlic ,when it turns little brown, add tomato chunks , pepper flakes .Boil this for a 3-4 minutes .

2) Add 2tsp of mixed herbs ,salt and papper to this mixture. Boil this for 5 minutes .Take off the bay leaf .You can use this as Pizza topping or dip to any appetizer of your choice.

BITE SIZE HOME MADE PIZZA

Ingredient's :

Pizza dough
2 cups all purpose flour
1 tsp yeast
1/2 cup warm water
salt
oil
cookie cutter

Topping
1/2 cup marinara sauce
1 big onion nicely chopped
1 tomato nicely chopped
1 capsicum nicely chopped
2 tbs mixed herbs (rosemerry and tyme )
1/2 cup mozzarella cheese
1 tsp paper flakes
Method

Dough :
1) Take a bowl mix the yeast and warm water keep this for a while to dissolve the yeast completely .
2) Take all purpose flour and mix the yeast ,salt and knead the dough with enough amount of water .
3) Knead this dough for about 10 minutes and keep it aside for 4-5 hours with generously spread the oil.

Toppings :
1) Remove the desire amount of dough ,dust the counter with flour ,gently press the dough in to flat disks 1/2 inch thick and cut the dough in to small ,small sizes with the help of cookie cutter .

2) Place each piece of dough in to baking pan ,spread the marinara sauce ,chopped onion,capsicum,tomato ,little herbs, sprinkle little mozzarella cheese and pepper flakes on the top .

3) Preheat the oven 375 degree and bake the pizza for 5 to 8 minutes till the bottom of the pizza and topping is nicely done. . Serve hot ..Enjoi!!!

vegetable Salad

INGREDIENT'S:

1 store bought salad pack
2tbs roasted almond
6-7 plain croutons
4-5 strawberry /any fruits of your choice
2 tbs Italian dressing
1tbs thousand island dressing
1 seedless baby cucumber chopped lengthwise
1 carrot chopped in to cubes
broccali nicely chopped
1 large red onion chopped lengthwise
4-5 cherry tomatos.
1/ 4 capsicum nicely chopped lengthwise
4-5 maltigrain chips (optional)
salt to taste
pepper
1/2 tsp pepper flakes (optional)

Method :

1) Spread all the fruits ,vegetables on the salad bowl(nicely wash and drain all the fruits and veggies ) and mix the chopped onion ,almond slices,little salt and pepper ,pepper flakes.

2)Then add dressing ( Italian and thousand island ) mix it with all the fruits and vegetables and serve with some croutons and maltigrain chips on the top . Enjoi :D

Thisone is a royal desert comes from southern part of india Hydrebad.It consists fried bread soaked in a saffron flavoured milk with garnished dry fruits. This all time desert needs few of the ingredients ,which is easily available at home .Try my very simple recipe and enjoy .

INGREDIENT'S :

4-5 bread slices
2 cups milk
1 cup sugar
6-7 strands of saffron
1/2 tsp cardamom powder
gee to fry
dry fruits for garnishing

METHOD :

1)Take off the crust of the breads and cut in to triangle shape keep it aside .

2) Take a heavy bottom pan and boil the milk with sugar ,saffron and cardamom powder ,simmer this for 20-30minutes.it looks like rabri .

3) Heat the gee in a pan and fry the bread pieces till it turns golden brown .

4) Soak the bread pieces in the milk that you made earlier and refrigerator this for 30 minutes ,garnish with dry fruits and serve chilled.Enjoi!!

MANGALORE BAJJI / GOLI BAJE

INGREDIENT'S :

2 cups self raising flour
1 cup yogurt
1 tsp ginger galic paste
1 tbs jeera/cumin seeds
3-4 green chillies nicely chopped
salt to taste
oil



METHOD :

1) Take a bowl and mix the self raising flour and yogurt together .It should be thick dosa consistency .
2) Add green chillies,ginger garlic paste ,salt cumin seeds,mix all together.if require add little water .
3) Heat the oil and take atsp full of batter and deep fry in a medium flame .
4) When it turns golden brown .put it in a paper towels and take off the excess oil.Serve hot with any ketch up or coconut chutney of your choice .Enjoi !!

note: if u use all pupose flour ..add pinch of baking soda and keep it aside at least 4-5 hours for nicely ferment or use sour curd .

DAHI VADA / MOSARU VADA

Ingredient's :

For Dahi :
2 cups yogurt/dahi
1 tsp sugar
coriander leaves
2 green chillies
1 tsp garted ginger
salt to taste

for vada :
2 cups urad dal
1/2 cup moong dal
4-5 curry leaves
3-4 green chillies
1/2 inch ginger grated
salt to taste
oil to fry

serving :
green chutney
tamarind and date chutney
1 tsp cumin powder
1 tsp chilly powder
salt to taste
coriander leaves
sev
Method :

Vada
1) Wash and soak the urad and moong dal for overnight
2)Grind this in to smooth paste
3)Add grated ginger,chopped coriander leaves,chopped green chillies,chopped curry leaves ,salt to taste
4) Heat the oil and fry the vada till it turns golden brown .
5) Take the hot vadas and put it in the cold water and squeeze the water and keep it aside .

Dahi
1) Blend the yogurt with little water untill it is smooth, add ginger,green chillies,sugar and little salt
2)Keep in the refrigerator for 30-45 minutes.

Serving
1) Take a serving plate and place the vadas and pour 2-3 spoonful of dahi over the vada.
2) Then put tsp full of green chutney and tamarind chutney,cumin powder,red chilly powder.
3) Garnish with sev and coriander leaves ,serve the dahi vadas chilled .
