Hurid Anna

Well, this one is comes to me from my Mom, she makes this with left over rice. It looks like chitranna but i don't think it tastes like that. I don't know why ...bcs of onion? Oh well, try this out and let me know guys :-) it tastes totaly different from chitranna ..believe me! EnjoY. Your hurid anna !!!

Ingredient's :

2cups cooked rice

1 cup chopped onion

1 tsp turmeric powder

5-6 green chillies

1/2 tsp hing

3tbs lemon juice

1tsp mustard seeds

1 tsp urad dal

2 tbs oil

4-5 curry leaves

salt to taste

Method;

1) Take a large bowl and put the cooked rice ,lemon juice ,salt to taste and keep it aside .

2)Then take a heavy bottom pan ,pour oil,when it becomes hot, add urad dal , mustard seeds,turmeric powder,hing ,curry leaves,green chillies and onion . saute this for 8-10 minutes .

3)Switch off the gas and let it cool for 10 more minutes .

4) Then add the rice and serve chilled with multi grain chips ...enjoi :)

Aloo Matar/ Peas and Potato curry



Ingredient's:

1 cup potato cubes
1/2 cup frozen peas
1large onion nicely chopped
1/2 cup tomato puree
1/2 tsp cumin seeds
1 tsp paprika
1tsp kasoor methi
1/2 tsp cumin powder
1/2 tsp garam masala
1/4 tsp turmeric powder
1tsp coriander powder
1/2 cup milk Low fat
Hand full of coriander leaves chopped
Hing
Salt to taste
Oil



Method:
1) Micro oven the potato cubes with some water for 8-10 minutes and when it is half done drain the water and keep it aside .
2) Take a heavy bottom pan ,pour some oil,add hing ,turmaric powder ,cumin seeds,then add chopped onion,and saute this for 4-5minutes .
3) When onion turns little brown add all the masala ingredients (cumin powder,coriander powder,paprika,and garam masala powder) half boiled potatoes,peas ,then add pureed tomato and bring it to boil for 10 minutes.
4) Then add milk and coriander leaves ,add salt to your taste and boil for another 5-10 minutes .
5) Garnish Kasoor methi on top and serve hot with rice /chapati of your choice ! Enjoi !!!:).

Spinach /Palak Rice

Ingredient's :


2cups basamati rice
1/2 cup frozen peas
1/2 tsp garlic minced
1tbs ginger chopped
1tsp jeera
1Cinnamon stick
3-4 cloves
1 large onion chopped
1tomato nicely chopped
1cup fresh spinach
2-3 green chillies
2tbs oil
salt to taste
coriander leaves

Method :

1) Micro oven the spinach and green chillies ,make fine paste using blender and keep it aside .
2) Soak the basamati rice for 1/2 an hour .

3) Pour 2 tbs oil in a pressure cooker, once the oil get's hotter add cumin seeds ,1 cinnamon stick, couple of cloves .
4) Then add chopped ginger , garlic ,onion saute till it turns brown then add sliced tomato, green peas and spinach paste.let it cook for 2-3 minutes .
5) Add the soaked rice to the above mixture and pour a cup of water, put the salt per taste.
6) Close the pressure cooker and put the wight and let it cook well.
7) Once the cooking is all done serve with fresh corinder leves on the top and raitha.Enjoi

Mavina kayi (Mango) appehuli/Neergojju

Mavina Kayi Appehuli or roughly Spciy Mango Curry, is one of the most prominent dishes amonng havyakas. These Mangos are very peculiar in the sense that they have a unique taste and flavor and i don't think they are that widely available. They are sweet, sour, jute-ish(fibrous) yet jucy. The dish just exploits the sweet and sour content of the mango's exceptionally well by combining the spice from yet again peculiar green chillies and other indian herbs. Goes well with white rice. Because the main ingredients seemed bit rare, i have provided the picture for those as well. hope it helps and you like the recipe and the dish:-)

Ingredients :
4-5 small mangoes (pic. shown below)
2-3 green chilles /sann mensina kayi (pic. shown below)
4-5 curry leaves
2-3 garlic pods
1 red chiily
4tbs jaggery
1tsp mustrd seeds
salt to tatse
1/2cup water
oil

Method :
1) Take a large bowl ,skin off the each mangoes , squeze them with 1/2 cup of water
2) Put salt,jaggery and sann menasina kayi /cut the green chillies and mix it with the above mixture and set aside for 4-5 minutes .
3)Meanwhile prepare the seasoning with oil,mustardseeds,curryleaves,garlicpods and redchilly.
4)Put that on the mango mixture and squze all the mangoes one more time and serve this with white rice. Enjoi

Bow shaped pasta salad ...Under 15 minutes .





Well, Who is not familiar with macaroni & cheese? while it may be popular dish in the western world i am not sure how many of us(Indian's) would like it just the way they prepare it. Personally it's too much of a cheese.. i feel the same for most of the pasta dishes. But i like pasta though, so wanted to always do something with it, kind of indianise, spice it up a little bit:-). And that's how my pasta salad recipe was born. I used the bow shaped pasta just for the great look it offers to the dish. You can use any shaped/kind of course!. This dish has obviously less cheese in it and has vegitables and inddian spices. Hope u guys like this one.


Ingredient's:
1/2 cup bow shaped pasta
4-5 cherry tomatoes
1/2 onion nicely
1/2 cup Swiss guard or spinach nicely chopped
1tsp each ginger and garlic chopped
2-3 green chillies
4tbs Parmesan cheese freshly grated .
4tbs milk
salt to taste
2tbs olive oil




Method :

1)Take a heavy bottom pan put 2 cups of water and bring it to boil. Then add salt and pasta when it is half done switch of the gas and drain the excess water. Keep it aside.

2) Take a pan add little olive oil,when it is hot add ginger, garlic nicely chopped, green chillies,onion when it turns little golden brown then add Swiss guard or spinach of your choice ..then add tomatoes and salt if required .

3) Then add pasta ,Parmesan cheese and milk saute this for 4-5 minutes .

4) Serve hot with grated cheese on the top .
