Kids Special ....Potato Nest and Potato Cutlet (egg)

Ingredients:

Potato (vegitable) nest :

1 large potato
1 carrot
salt to taste
pepper or red chilli powder
egg white 0r corn starch
Paddu maker
oil to deep fry

potato cutlet(egg):

1 boiled potato
1 green chilly
1/2 onion nicely chopped
2tbs grated cheese
1tsp ginger garlic paste
1tsp garam masala (optional)
2tbs corn starch
coriander leaves
vermicelli
salt to taste
Oil to deep fry

Method:

Potato (Vegitable )nest

1) Peel and grate the carrot and potato .
2) Take a pan and put the salt and pepper or red chilli powder and egg white or corn starch ,grated potato and carrot mix it well.
3) Heat the paddu maker and put 1 tbs ful of this vegitable mixture and make a nice nest shape .If required add little oil,when it is half done ..very carefully take out of the paddu maker and set aside .
4) Heat the oil and deep fry this vegitable nests .Now your Potato (vegitable) nest is ready.

Potato Cutlets ( eggs ):

1) Heat a tbsp of oil in a pan, add the onion and green chillis and saute till the onions turn transparent,Then add pinch of salt and pinch of garam masala pwd and combine. Turn off heat and keep aside.
2) Combine mashed potatoes,onion mixture , grated ginger& garlic paste , grated cheese, salt and coriander leaves. Prepare lemon sized balls,.( I have made very small small ..balls just to atract the kids but u can make any shapes acoording to ur choice ) flatten each ball to form oval shaped cutlets.
3) In a small bowl, combine corn flour, water and pinch of salt. Dip each into the corn flour-mixture and roll them in vermicelli.
4) Heat oil in a heavy bottomed vessel. Once it piping hot, reduce flame and place the cutlets into the hot oil and deep fry on medium flame .
5) Then place this potato cutlet (eggs) in the vegitable nest and serve hot with any chutney or ketchup of your kids choice ...i have tried this recipe for kids ...but any body can have this cutlets and nest .It can be your snack time hit .Enjoi :D

Wishing you a very happy Ugadi with my Cham Cham !

Wishing you all my blogger friends and readers a Happy Ugadi filled with joy and prosperity .

Folks, some good news to share on this occasion .. Recently won the 2nd prize in Mega Click Contest conducted by Gayathri. I am very thankful to Gayatri for giving me such a wonderful opportunity to participate and choosing my click to 2nd place. And thanks to my husband who got me this wonderful camera of course ...hehe and my lucky charm Ananya (2 years old) my sweet cutie pie she was soo behind that flower, that day it took almost an hour to take one pic as she was grabbing that capsicum flower .. :-)

So i celebrate Ugadi with my award and also by sharing Bengali sweet cham cham recipe.

This sweet is made of home made paneer ,sugar and rose water .Was thinking of Priya's pink color food when i saw a cham cham pack at a indian groicery shop. Soon the thought became the reality! so here is the fresh Cham Cham with refreshing pink ... enjoi,... folks ..Happy ugadi once again . !!

Ingredient's:

1/2 gallon milk

1tbs lemon juice

1 cup sugar

3 glass of water

1/2 tsp corn starch (Optional)

1/2 tsp rose water

pinch of pink food color

Dry coconut powder


Method :

1)Boil the milk in medium high ,when it starts boiling add lemon juice and mix it well ,now milk will start to curdle.Switch of the gas and let it get set for 10 minutes .

2) Strain in to a cloth and make like a big knot and hang it in for 1/2 hour .

3)When all the water is drained ..take the mixture in the pan (step1) in to the bowl and mix it well ..to make a smooth paste .

4) Then add little food color and mix it well .(I have used pink color ).

5) Divide the dough in to small equal parts and make oval shaped balls and set aside (Pls make make sure the balls are smaller in size as it would become double in size once you add sugar and water)

6) Take a large pan , put sugar and water, mix it well .When it starts boiling add rose water and put all the oval shaped cham cham(pannir rolls) cover the pan and let that cook for 10 -15 minutes .Switch off the gas and and let it cool down for another 10 minutes and then take out the cham cham and refrigerate that for at least 1/2 hour .

7)Put dry coconut powder in the plate and roll over the cham cham or garnish with any dry fruits ..of your choice .Enjoi

Dum Veg Biriyani (Grandeur Dum Biryani ! )

Dum biryani (i like to call it grandeur biryani coz that's what it is actually.. very royal, colorful) might look like bit too long a procedure to follow, but if you make up your heart and just do it, you have made yourself a huge favor to enojoy a delightful meal:-) Because dum biryani is such a grandeur dish it just creates a rich ambience by it's presense alone on the dining table.
it's a sure thing to make you feel promised of some applaudes if you are having some guests as well :-). Ok now let's quickly get down to the business... hehe

Also One could make vegitarian or a non vegitarina, obviously i have made vegitarian version . Dum veg biriyani is made using a whole lot of indian spices, flavorful basamati rice, healthy vegetables, yogurt .Enjoi !!

Ingrediant's :

2 cups basamati rice

1 bay leaf

1 cinnamon stick

1 star Annise

3-4 cloves

3 tsp Everest veg biriyani powder

2 large onions
1 tsp ginger garlic paste

2 tomatoes
1/2 cup yogurt
1 cup vegetables boiled (carrots,green beans,potato,cauliflower,peas)
1 tsp red chilli powder
a bunch of coriander leaves finely chopped
4 tbs oil
1/2 tsp turmeric powder

6-7 Saffron strands soaked in the warm milk

2tbs butter

Method:

1) Wash and boil the rice with little salt and bay leaf.Keep it aside .

2) Thinly slice a onion ,then take a pan ,pour little oil , fry a portion of sliced onion till it turns golden brown .

3)In the same pan fry all the dry fruits (cashews,raisins,and almond ). Transfer the mixture from pan to another container.

4)Continue with the same pan ..pour little more oil.. add cinnamon stick,star anise,and cloves, fry the remaining finely sliced onion , when it turns golden brown,add ginger garlic paste ,3 tbs veg biriyani powder ,red chilli powder ,turmeric powder, boiled vegetables and 2 pureed tomatoes.

5)Cook till oil separates, add 1/2 cup of yogurt and salt.. mix it well.

6) When it becomes little thick, add finely chopped coriander leaves. This is your veg biryani curry.

7) Grease the pressure cooker or any bowl ,spread the half the rice , veg biriyani curry,then 2tsp saffron mixture,dry fruits mixture ,coriander leaves , fried onion,and little butter on the top.
Continue the same procedure with remaining rice and curry

8) Then cover the pressure cooker with foil ,and double boil or cook the rice in the low flame for 10 -15 minutes .Serve hot with any spicy curry..or raita ..Enjoi .!:).

Appam is a fermented rice pancake, it's a south indian delicacy mostly of Kerala.This one is my favs and i often make this for morning breakfast. Appam recipe comes to me from one of my best friends Sowmya aneesh. Thanks a bunch Sowmya for sharing this wonderful recipe with me . So folks i hope you all enjoi the very easy recipe @ home

Ingredients:

2 cups sona masoori rice
1/2 tsp fenugreek seeds
1/2 cup rice flakes
1/4 cup cooked rice
1tsp dry yeast
1/4 cup luke warm water
1 tin coconut milk
1tsp sugar
salt to taste

apamkara / normal dosa tava

Method :

1) Wash and soak the rice and fenugreek seeds for 4-5 hours
2) Drain the rice and grind together with rice flakes ,cooked rice and coconut milk .
3) If required add little water .
4) Dissolve the yeast in the lukewarm water and then add the sugar .
5)Add this mixture to dosa batter and keep the dosa batter in the warm place for nicely fermention.
6) Before making the appam add salt to the batter and mix it well .
7) Heat the apam pan /normal dosa tava add little oil if required .Then pour 2 big spoon full of batter and place the lid and cover it completly .
8) When it cooks take off the appam and serve hot with any kind of chutney or curry of your choice. enjoi !!!:D
