Eggplant/Brinjal Chutney/ Hindi/ Bajji / Gojju

I always use this kind of eggplant ..which gives beautiful color and tatses better too .

Ingrdients:
1 large Brinjal/Eggplant
4-5 green chilies
1large onion nicely chopped
1tsp mustard seeds
1tsp urad dal
1turmeric powder
4-5 curry leaves
1tbs coconut
pinch of hing
2tbs coconut oil
1/22 tsp jaggery(optional)
salt to taste
1/2 tsp amchur powder


Method:

1) Grease the eggplant with little bit of oil,then microwave this for 10 minutes .
2) When it is fully cooked ..take off the skin and mash it completely.Add little salt and amchur powder ( I also add little jaggery to this)Keep it aside .
3) Heat a pan ..pour oil,mustard seeds, urad dal, hing, turmeric powder, green chillies, curry leaves and onion nicely chopped .
4) Saute this for 4-5 minutes till onion turns little golden brown .Then add the brinjal and salt if required .Cook this for few more seconds ..Turn of the heat,garnish with coconut and serve hot with White rice ..Enjoi !:D

This is my first time participation on the Jugalbandi "click" contest with my bi color radish flower for the july 2009 event. I have come up with a simple yet beautiful flower from radish.I chose radish as it has pink skin and light pink flesh which goes well with a flower appearance. Hope you llike it.

Dry Aloo Mattar/ Potato peas Masala

Ingredient's:

1cup frozen peas
8-9 small baby potatoes
1tsp jeera /cumin seeds
1/2 tsp mustard seeds
pinch of hing/assofotidia
1tsp chilly powder
1/2 tsp turmeric powder
1tsp amchur powder
1tsp dhana jeera powder
1/2 tsp garam masala
2tbs oil
Few ginger pieces for garnishing


Method :

1)Wash and boil the pricked baby potatoes ,when it is half done,take out and spread it on the paper towel and take off the excess water and skin .

2) Heat the oil, add cumin seeds,mustard seeds, hing ,dhana jeera powder,turmeric powder,then add frozen peas and half boiled potatoes ,salt to taste ...Saute this for few minutes .

3)Then add the amchur powder,red chilly powder and garam masala powder .Mix it properly .Garnish with some ginger pieces ,Turn of the gas and serve hot with Roti /Rice ..of your choice !!:D

Methi Dal

Ingredient's:

1cup toor dal
1/2 cup frozen methi or fresh
2-3 green chillies
1 onion nicely chopped
1 tomato nicely chopped
1tsp red chilly powder
1/2 tsp turmeric powder
1tsp cumin seeds
2tbs lemon juice
2tbs milk (optional)
1/2 tsp mustard seeds
1 pinch of hing
4-5 curry leaves
handfull of coriander leaves

Method :

1) Pressure cook the washed toor dal and methi with 1/2 tsp of turmeric .

2) Heat the pan put oil,cumin seeds, mustard seeds, green chillies chopped, hing,curry leaves,then add the chopped onion,saute this for 3-4 minutes,when it turns golden brown then add chopped tomatoes.

3)Then add the cooked toor dal and methi bring it to boil for 2-3 minutes .Then add the lemon juice,red chillie powder ,milk and chopped coriander leaves .Serve hot with rice or roti .Enjoi!!!:P

Capsicum Junka

Ingredients :

1 cup capsicum chopped(I have used 3 different color capsicum ) .
4 tbs besan
1/2 tsp chilli powder
3-4 green chillies
1tsp coriander and cumin powder
1/2 tsp garam masala
1/2 tsp turmeric powder
1 tsp mustard seeds
1tsp cumin seeds
3-4 curry leaves
Pinch of hing
salt to taste


Method :

1)Heat the oil then add all the seasning ingredients like ..Mustard seeds,cumin seeds,curry leaves and green chillies ..Then add pinch of hing and turmeric powder .

2) Then add chopped bell pepper fry this for 10 minutes till the bell pepper becomes little softer .Then add coriander, cumin powder, chilli powder, garam masala powder and salt to Ur taste .
3)Then sprinkle the besan and fry this for 4-5 minutes ..If required add little oil .

4) When the besan turns little brown ..switch of the gas and serve hot ..with chapathi .:) Enjoi .

Rice Keesaribath

In havyaka community the core ingredient for "Kesaribath" is a special type of rice. It's called as "sannakki" in Kannada which has a unique flavor and taste that is best suited for Kesaribath.
It's a very rich sweet dish usually prepared for grand occasions like wedding or house warming cermonies. With saffron, ghee, cashews, raisins it not only looks beautiful but tastes equally great. Of course since i did not get sannakki here in US, i used the basumati rice.. and it turned out nice as well. hope you like it too.

Ingredient's:

1 cup basamati rice nicely cooked
1 cup sugar
1/2 cup ghee
1tsp lemon juice
pinch of salt
1.50gm saffron
1tsp milk
raisins and cashews for garnishing


Method:

1) Take a small bowl and mix the saffron strands and milk mix well &keep it aside .

2) Take a heavy bottom pan .Put cooked rice and sugar ,and ghee ..Saute this for 2-3 minutes Then add pinch of salt and Saffron milk .

3) Mix this all together in low flame for 15 -20 minutes till the ghee separates from the pan .

4) Serve hot or cold garnish with raisins and cashews on the top . !Enjoi!!!
