YUMMY BAKLAVA AND HAPPY NEW YEAR 2009 ..

Baklava is a pastry recipe ,layers of fillo dough filled with almond ,honey and ground cinnamon. This one is very famous deserts in Middle Eastern countries .Usually made with pistachios and walnuts but i have tried almond and oatmeal cookies . Try this and enjoy the happy and prosperous new year .

INGREDIENT'S :

1 fillo dough sheets
1/2 stick unsalted butter
1/2 cup almond crushed powder
1tsp cinnamon powder
1 cup brown sugar
2 oatmeal cookie crushed pieces
4-5 muffin cups
orange zest for garnishing (optional)


for syrup :
1 cup sugar
1/2 cup water
1/2 tsp lemon zest
1/2 cup honey

Method :

1)Preheat the oven 350 degrees.

2) Toss together almond crushed powder and oatmeal cookies with cinnamon powder and keep it aside .

3) Take fillo dough it should be in room temperature and cut the fillo dough in to small squares and butter each layer .

4) Take tbs full of almond powder mixture,put that in to each squares and cover that with help of little water and place that in to muffin cups, brush little butter .

5) Bake this for 30 -40 minutes till it turns golden brown .

6) Make a syrup when baklava is baking .

7) Boil the sugar and water till sugar melted .Then add lemon zest and honey simmer for 20 minutes .

8)Remove the baklava from the oven and sprinkle the syrup top of each baklava that you made.

9) Let it cool for awhile and serve ...Enjoi ...!!!!!

Matchstick Potatoes

Ingredient's :
2 large potatoes peeled
Rosemary leaves nicely chopped
1/2 tsp red chilly powder
Orange zest 4-5
Salt
Oil


Method :
1) Grate the peeled potatoes in to thin matchsticks .Put that in to cold water as you cut.
2) Drain the water and dry them thoroughly with the paper towels.
3) Heat the oil and fry the batch of potatoes ,cook for 4-5 minutes until golden brown .
4) Remove from the oil ,put that in to paper towels to take off the excess oil.
5) Add salt to your taste ,chopped Rosemary leaves,little red chilly powder.
6) Serve hot garnish with few strands of orange zest .
7) Enjoi !!!

Dum aloo

Ingredient's :

6-7 baby potatoes
2 medium size onion nicely chopped
1cup tomato puree
garam masala powder
coriander leaves
2 tbs sour cream
4 tsp milk
4 tbs oil

for masala

2 tsp coconut grated
3-4 red chillies
1/2 inch ginger
1/2 tsp turmaric
tamarind small lemon size


Method :

1) Wash and boil the pricked baby potatoes ,when it is half done , drain the potatoes & dry them thoroughly with paper towels.
2)Heat the oil and shallow fry the potatoes ,when it turns little golden brown keep it aside .

3) Make a fine paste of of all the masala ingredient's which is mentioned above .

4) Heat the frying pan and add little oil, fry the chopped onion till it turns golden brown ,then add the tomato puree fry this for 4-5 minutes.

5) Then add the masala paste ,garam masala ,mix this for 3-4 minutes .Add little water if required,bring it to boil.

6) Then add fried baby potatoes ,little milk,and sour cream ,cook in a low heat till the gravy becomes thick .

7) Garnish with coriander leaves ,serve hot with any kind of parata or roti of your choice .Enjoi !!!!!

Shavige /Vermicelli Pakoda

Ingredient's :

2 cups shavige/vermicelli
1-2 cup gram flour
4 tsp rice flour
1/2 onion nicely chopped
3-4 green chillies
4-5 curry leaves
3 tsp coriander leaves
1tsp cumin seeds
1/2 ajwine powder
ginger garlic paste
hing little
salt to taste
oil to deep fry

Method :
1) Heat the pan and fry the shavige /vermicelli till it tuns little brown and add enough water to cook the shavige.
2) Take off shavige /vermicelli and drain the excess water , keep it aside .
3) Add gram flour, rice flour ,chopped onion,green chillies,hing,coriander leaves,ginger garlic paste ,curry leaves nicely chopped,cumin seeds,ajwine seeds,salt to your taste.
4) Mix all the ingredient's together, make desire shape
5) Heat the oil ,fry the pakoda till it turns little brown.
6) Serve hot with any sauce or chutney of your choice ..Enjoi!!!

Paddu/Appe/Guliyappa

Paddu

Ingredient's :

2cups idly rice
1/2 cup urad dal
large onion nicely chopped
ginger and garlic nicely minced
3-4 green chillies nicely chopped
4-5 curry leaves chopped
hand full of coriander leaves
salt to taste
1/2 tsp jaggery

Method :

1) Wash and soak the rice and urad dal for 3-4 hours .
2) Grind the rice to make smooth paste ,should be in dosa batter consistency .
3) Keep this for 4-5 hours for nicely ferment .
4) Then add chopped onion ,ginger chopped ,garlic chopped,green chillies nicely chopped ,coriander leaves ,curry leaves ,jaggery and salt to your taste.
5) Heat the non stick paddu maker and pour the batter,cook this till both sides turn little brown .
6) Add little oil if it is required .
7) Serve hot with coconut chutney .Enjoi .

Hot Bread Ice Cream

Ingredient's :

3-4 slices of bread
1/2 cup vanilla ice cream
1/4 cup milk
oil to deep fry


Method :

1) Dip the bread slice in milk and squeeze it.
2) Take 1 tsp full of ice cream put it in to bread and make a ball out of this .
3) Heat oil in the pan and deep fry the bread balls .
4) Make sure your flame is set to medium low .
5)When it turns brown ,take out , pour it on paper towel and serve hot.

Vegetable Panini

Ingredient's :

1 large focaccia herbs bread

1large onion

1tomato

1/2 capsicum

4-5 rosemary leaves

3-4 sun dried tomato & red pepper

1tsp italian dressing

1tsp south west dressing

1 slice cheese (optional)

2 green chillies

1tsp Olive oil


Panini Maker

Method :

1) Wash and cut the tomato, onion,green chillies and green capsicum keep it aside .

2) Medium heat the panini maker and grill all the vegetable till it turns little tender .

3) Cut the focaccia bread in to your choice of shapes.

4) Put tsp of italian dressing , south west dressing , grilled vegetables ,sun dried tomato's and pepper little rosemary ,slice of cheese,and keep a bread slice ,put oilve oil and press it in the panini maker for 4-5 minutes .

5) Serve hot with any drinks of your choice !

Banana Dosa (Dadaka )

Ingredient's :

2 cups idly rice
1tsp fenugreek seeds
1/4 cup urad dal
2riped bananas
4-5 tbs jaggery
salt to taste

Method :

1) Wash and soak the rice ,urad dal.and fenugreek seeds for 3-4 hours .
2) Peel and mash the bananas and keep aside
3) Blend the rice to make fine batter .
4) Mix the mashed banana, jaggery and salt and keep batter for 8-10hours .
5) Heat the tava and put little oil, pour 2tbs of banana batter on the tava .Spread alittle.
6) Cook both sides of the dosa in a very medium flame .
7) Serve hot with any Chutney or Gee tastes heaven.Enjoi!!!
