


I always use this kind of eggplant ..which gives beautiful color and tatses better too .
Ingrdients:
1 large Brinjal/Eggplant
4-5 green chilies
1large onion nicely chopped
1tsp mustard seeds
1tsp urad dal
1turmeric powder
4-5 curry leaves
1tbs coconut
pinch of hing
2tbs coconut oil
1/22 tsp jaggery(optional)
salt to taste
1/2 tsp amchur powder
Method:
1) Grease the eggplant with little bit of oil,then microwave this for 10 minutes .
2) When it is fully cooked ..take off the skin and mash it completely.Add little salt and amchur powder ( I also add little jaggery to this)Keep it aside .
3) Heat a pan ..pour oil,mustard seeds, urad dal, hing, turmeric powder, green chillies, curry leaves and onion nicely chopped .
4) Saute this for 4-5 minutes till onion turns little golden brown .Then add the brinjal and salt if required .Cook this for few more seconds ..Turn of the heat,garnish with coconut and serve hot with White rice ..Enjoi !:D
